Let's look at what it takes to make a great cup of coffee. Around 40% of the flavour is down to the producer, 30% is down to the roaster but the remaining 30% depends on you, the barista: and you do make a difference. Once we have chosen fantastic coffees, and carried out our roasting with care and enthusiasm, the ball is now in your court!
